Pre-, probiotics combo may reduce food allergy: Danone study

A supplement combining a prebiotic fibre and a probiotic strain may reduce allergic responses to cow's milk, when used in conjunction with small amounts of whey, says a new study.

Mice fed the synbiotic mixture and undergoing oral sensitisation with whey displayed less allergic skin response and a decreased anaphylactic reaction, compared with whey-sensitised mice not receiving the supplement, according to findings published in the Journal of Nutrition.

"Dietary supplementation with [prebiotic] Immunofortis, [probiotic] Bifidobacterium breve M-16V, and particularly the synbiotic mixture, provided during sensitization, reduces the allergic effector response in a murine model of IgE-mediated hypersensitivity that mimics the human route of sensitization," wrote the researchers led by Leon Knippels from Danone Research–Centre for Specialised Nutrition and the University of Utrecht.

Immunoglobulin E (IgE) is the predominant antibody associated with an allergic response.

"This model shows the potential for dietary intervention with synbiotics in reducing the allergic response to food allergens."

If the results can be repeated in humans, synbiotics may offer hope for the increasing number of people suffering from allergic disease. An estimated eight per cent of children in the EU suffering from food allergies, according to the European Federation of Allergy and Airways Diseases Patients' Associations.

The most common food allergen ingredients and their derivatives are cereals containing gluten, fish, crustaceans, egg, peanut, soybeans, milk and dairy products including lactose, nuts, celery, mustard, sesame seed, and sulphites.

"Cow milk allergy is the most common food allergy in children," explained Knippels and his co-workers. "So far, no effective treatment is available to prevent or cure food allergy."

Study details

Using a mouse model of orally induced cow's milk allergy, the Netherlands-based researchers tested the effects of dietary supplementation with a prebiotic mixture (2 per cent, Immunofortis, a mix of galacto-oligosaccharides and fructo-oligosaccharides), a probiotic strain (2 per cent, B. breve M-16V, Morinaga Milk Industry), or a synbiotic (2 per cent) mix of both.

"Mice fed pro- and prebiotic diets had a significantly reduced acute allergic skin response upon whey challenge in the ear compared with whey-sensitized mice fed the control diet," report the researchers. "The synbiotic diet was even more effective and almost completely prevented occurrence of the acute skin response as well as anaphylactic shock reactions."

While IgE levels were not affected by any of the interventions, said the researchers, but IgG2a levels were – the antibody specific to whey. These increases in IgG2a may reflect a response by T-cells in the pro-, pre-, or synbiotic diet, said the researchers.

"Synbiotics comprise a promising concept that may be more effective in reducing allergic symptoms than single preparations of pre- or probiotics," concluded the researchers.

Definitions

According the FAO/WHO, probiotics are defined as "live microorganisms which when administered in adequate amounts confer a health benefit on the host". Prebiotics are "nondigestible substances that provide a beneficial physiological effect on the host by selectively stimulating the favourable growth or activity of a limited number of indigenous bacteria".

Prebiotics are defined as: "A selectively fermented ingredient that allows specific changes, both in the composition and/or activity in the gastrointestinal microflora, that confers benefits upon health wellbeing and health." (2004)

pemulung?

Pertama saya ketemu, dia hanya seorang diri, duduk termangu.. dg baju lusuh membawa karung sampah dan dg pandangan kosong,.. seperti tak ada harapan....

Akhirnya saya putuskan untuk mendekati, saya tanya: apa sudah makan? dia bilang belum..

dan dia bilang: "saya pengin sekolah bu..." pengin ikut ibu..

Saya bilang: ok, ok... tapi kamu bilang dulu sama bapakmu, saya takut orang tua mu marah....

Dia bilang: "Bu..., bapa saya gak bisa ngomong...?
Maksudmu apa...., apa dia bisu...??
Dia mengangguk...
Ohh Yaa Allah...(batinku..)

dia bercerita lagi: Bapa sering disiram minyak sama ibu saya bu...(anak itu cerita sambil berlinang air mata)

OHHH...Yaa Allah..., ketika itu juga rasanya semua tulang2 saya lepas, dan teriris iris ngilu... (betapa kasihannya batin anak ini... sesungguhnya..)
Saya rasanya tak ingin pulang dulu sebelum bisa membuat anak ini tenang dan sedikit ada harapan...
Rasanya juga pengin saya ajak pulang,.... untuk tinggal di warung kecil saya (karena rumah ku juga belum memungkinkan untuk di tinggali orang asing)..

Setelah tenang,... saya janji untuk esoknya sy kembali lagi...

Ketika saya kembali, dia ajak adiknya yang masih 5th dan 6th...
Juga ada temen2 nya yang sudah sekolah walopun anak pemulung...

Alhamdulillah saya juga sudah menemukan sekolah yang kira2 dapat menampung mereka..
Tinggal kemantapan mereka saja, dalam sekolah.

Alhamdulillah mereka sudah datang sekali ke warung kecil saya, sehingga InsyaAllah bisa sering komunikasi dan membantu mereka se mampu sy tanpa harus saya cari mereka..

Lalu saya ber andai-andai, seandainya saya punya tanah kosong dan uang lebih... saya buatkan mereka rumah singgah... yang dapat membuat mereka selalu bisa mengembangkan bakat dan berbagi dalam hidup ini.... sehingga meringankan beban mereka dan mereka juga punya harapan masa depan yang lebih baik..

Semoga Allah swt mengabulkan apa yang sy harapkan ini... Amien...

Bacteria eating viruses help fight food pathogens: EFSA study

“Bacteria eating” viruses, known as bacteriophages, could be an effective way of eliminating specific food pathogens, according to a recent report from the European Food Safety Authority’s BIOHAZ Panel.

Some bacteriophages, under specific conditions, could be used to eliminate specific pathogens in milk and meat products, concluded the study.

The panel, which deals with biological hazards in the field of food safety and food-borne diseases, noted that bacteriophages tend to persist longer than their hosts and behave as inert particles in the environment.

But, their long-term antibacterial activity is reduced on dry surfaces and their persistence in food varies with each bacteriophage, and with the conditions of application. Factors include: Dose, and physical and chemical factors associated with the food such as pH and moisture levels. For example, refrigeration temperatures improve the persistence of bacteriophages on the surfaces of meat and dairy products.

Environmental factors

However, after reviewing peer-reviewed scientific literature, the panel was unable to conclude whether or not bacteriophages can protect against bacteria in cases where the food becomes re-contaminated. The effectiveness of bacteriophages against re-contamination of food may vary according to the characteristics of the food, the type of bacteriophage and how it is used, and environmental factors.

The panel recommended further research to gauge the persistence of bacteriophages in foods and their ability to prevent recontamination with bacterial pathogens. Research should focus on specific combinations of bacteriophages, pathogens and foods, it said.

The panel’s study stemmed from a request from European Commission for the European Food Safety Authority (EFSA) to advise on the use of bacteriophages on food of animal origin. It was asked to particularly focus on the mode of action of bacteriophages on carcasses, meat and dairy products.

Bacterial cells

Bacteriophages occur in a broad range of habitats in nature and can be isolated from meat, milk and derived products. They replicate best on growing bacterial cells, but can also reproduce on cells which are not in a growing phase.

The US Food and Drug Administration first approved the use of bacteria eating viruses as food additives in ready-to-eat meat and poultry to protect against Listeria three years ago.

Fermentasi Kedelai Berkelanjutan

Dalam rangka melakukan penelitian yang berkolaborasi dengan Masyarakat Ekonomi Eropa (MEE), Prof. Dr. Ir. Sri Kumalaningsih, M.App.Sc melakukan kunjungan ke Thailand pada Senin (27/4)-Kamis (7/5). Diwawancarai PRASETYA Online, Guru Besar Fakultas Teknologi Pertanian ini menyatakan bahwa proposal yang akan diajukannya berjudul "Sustainability of Fermented Soybean to Alleviate Poor People". Dalam penelitian tersebut, pihaknya berupaya untuk menyusun aneka teknologi fermentasi yang murah dan tepat guna di berbagai kawasan di Asia dengan menggunakan kedelai varietas lokal. Beberapa negara yang menjadi acuan diantaranya adalah Thailand, Indonesia, China, dll. Di Thailand, pihaknya secara khusus melakukan observasi pengolahan kedelai untuk pembuatan kecap dan tauco dalam skala industri besar. Sementara di Indonesia, observasi serupa pun dilaksanakan dengan pengamatan khusus pada pembuatan tempe secara tradisional dalam skala industri kecil dan menengah. Hal yang menjadi perhatian khususnya ketika berkunjung ke Thailand adalah pengolahan kedelai untuk menjadi aneka produk tanpa menyisakan sedikitpun limbah dengan proses yang lebih cepat dan manajemen yang tertata. "Mereka bekerja dengan disiplin dan etos kerja tinggi yang disertai manajemen yang tertata sehingga lebih efisien dan produktif. Selain itu, mereka juga telah memperhatikan manajemen lingkungan sehingga proses produksi relatif lebih higienis", terangnya. Program kali ini merupakan salah satu perwujudan dari visinya yaitu teknologi tinggi untuk masyarakat tak berdaya (high technology for poor people). Terkait hal ini, ia secara khusus menyoroti program plasma di Thailand dimana industri skala besar berkolaborasi dengan Usaha Kecil Menengah (UKM) diantaranya dalam hal supply bahan baku dan penanganan sub product maupun by product. Melalui kunjungannya kali ini, ia bermaksud untuk melakukan studi banding dan tukar wawasan dalam berbagai proses pengolahan kedelai di Asia. Manajemen ini pula, yang menurut rencana akan ia gunakan dalam merealisasikan idenya untuk memasok susu kedelai ke berbagai rumah sakit di Indonesia. [nok]

Jamur Tiram - Purwokerto

Assalamualaikum, buat semuanya

Memang cukup mudah untuk membudidayakan jamur tiram. Tetapi terkadang bahan baku sulit didapat terutama bibit dan serbuk gergaji apalagi untuk daerah perkotaan yang justru merupakan lahan pemasaran yang sangat bagus. Dengan permasalahan yang demikian tidak mustahil asa untuk berbudidaya jamur jadi berkurang atau malah mungkin tidak dijalankan karena malas yang mengakibatkan kerugian.

Jika anda ingin memulai usaha ini mungkin anda bisa bermitra dengan saya. Saya juga menjual media jamur tiram siap panen. Bentuknya sudah dibungkus dg plastik PP (polypropilen), sudah memalui tahap pencampuran, pengukusan pemberian bibit dsb. Jadi anda tinggal melakukan perawatan dg menyemprotkan air 3-5 kali setiap hari. Dan anda tinggal memanen dalam beberapa hari (tergantung umur dari pembibitannya)
